Fresh scallops
1 package of thick cut bacon
Lemon slices for grilling
Fresh shrimp
Grape tomatoes or sliced small Jersey tomatoes
Small red bliss or other potatoes, quartered (optional)
Salt and pepper to taste
Grits (optional)
Butter (for grits, also optional)
White cheddar, grated (optional)
Lemon wedges for serving

Directions:
Directions:
Wrap scallops in bacon and skewer to hold in place. Alternate a scallop and lemon slice until your skewer is full but not packed. On a separate skewer, add shrimp, alternating shrimp and tomato until full but not packed. Skewer quartered potatoes. Drizzle skewers with olive oil and sprinkle with salt and pepper. Grill skewers over the fire until fully cooked.
Meanwhile, prepare grits per package instructions and add grated cheese, butter and salt and pepper to taste.
Serve meat with potatoes and/or grits as a side with a lemon wedge.

We love camping near the Jersey shore in the summer and finding various places to swim and shop for fresh seafood and produce. Skewers are a great way to prepare meat, especially seafood, and bacon-wrapped scallops are a particular treat. Grits are easy in the giant Pyrex mixing cup. I recommend investing in stainless steel skewers that can easily be washed and reused. Mine were less than $20 on Amazon and came with their own travel bag for easy transport. They’re not even really camping gear, but they work.

If you’re camping in the mountains or the country, try any combination of local farm stand meat (beef, chicken, venison, sausage, etc.) and veggies that appeal to you on skewers over the fire.
