2/3 cup vegetable oil
1 cup white sugar
1 egg
1/4 cup molasses
2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/4 cup white sugar
1/2 teaspoon salt
Steps
Mix oil and sugar thoroughly with electric mixer. Add egg and mix well. Pour in molasses. Sift and add dry ingredients until incorporated.
Roll teaspoonful of dough into ball, drop into sugar to coat.
Place on ungreased cookie sheet. Bake at 350 degrees F (175 degrees C) for 15 minutes.
Notes
Parchment can be used for easier cleanup/removal from the pan.

This recipe is one that I have made many times. I would make it for my dear friend John who was fighting cancer.
Then I made them for another dear friend whose name was Smithy and the cookies became known as Smithy Cookies.
Both John and Smithy are no longer with us. They are gone but not their memories are not. I remember them when I make this cookie recipe. ❤️
