10 pounds 90/10 ground beef from Sam's Club..comes in a roll & is discounted;
2 # 10 cans of crushed tomatoes in puree (106 ounces each)
1/2 C chili powder/seasoning to start...likely use more
1/4 C paprika
2 Tb each, salt & black pepper
1 # 10 can each of dark red kidney beans and garbanzo beans (and maybe more)
4 Tb minced garlic
4 sweet onions, diced
4 sweet red peppers, diced
4 3 oz cans of chopped chili peppers
1 pot of strong coffee to thin out the sauce as needed (use Yeungling Lager, a dark beer but not bitter)
vegetable oil

Directions:
Directions:
Saute the red peppers for 5 minutes; then add the onion and saute for 5 minutes; then turn down the heat and add the garlic for 3 minutes (DO NOT BROWN the garlic);
Add the meat and brown; some of the salt & pepper as you go;
Add the sauce & remaining spices; coffee as necessary.
Simmer uncovered for one hour so that the flavors can meld;
Add the beans and simmer for 15 more minutes;
taste and adjust the flavorings.
