3-4 pound beef sirloin tip roast
2 Tablespoons flour
2 Tablespoons shortening
2 teaspoons salt
1/4 teaspoon pepper
1 medium onion, peeled and sliced
2 bay leaves
1 clove garlic, minced
1/2 cup hot water


Later....
8 small onion, peeled
8 medium carrots, pared
8 small potatoes, pared
1 1/2 teaspoons salt

Directions:
Directions:
Sprinkle roast with the flour and rub in. In dutch over, brown slowly on all sides in the shortening. Season with the salt and pepper. Add rest of ingredients. Cover and cook in moderate oven (350 degrees) about 2 hours or till meat is almost tender.

Add the vegetables in the later section. Sprinkle vegetables with the salt. Cover and cook for 1 1/2 hours more or until meat and vegetables are tender.

Thicken liquid for gravy.
