1 1/2 to 2 Pound Pork Loin Roast
1 tsp. Salt
1/4 tsp Pepper
3 Large Sweet Potatoes, peeled and sliced to 1/2 inch cubes
1 Red Onion sliced in rings (1/2 inch wide)
1/2 tsp. dried thyme
1 Quart (4 Cups) Apple Juice or Apple Cider - available in the Fall

Season the pork with salt and pepper

You can brown the pork on all sides of the roast in a frying pan and then put it in the crock pot OR you can just put it into the crock pot. Browning it first adds some additional flavor, even though I have done it both ways. Be sure to spray the inside of your crock pot or use a liner.

Add in the sweet potatoes and onion.** See the note below.
Sprinkle in the thyme and salt.

Pour in the juice/cider.

Cook on low for 6-8 hours or High for 4-6 hours.

**Note: I recommend adding the sweet potatoes later in the cooking cycle to avoid making them too mushy from overcooking. They can be added during the last 3 hours when cooking on low or during the last 2 hours when cooking on the high setting.
