10 cups zucchini, seeded and chopped
3 green peppers, seeded and chopped
4 cups onion, chopped
5 tbsp salt
2 1/2 cups vinegar
5 cups sugar
1 tbsp turmeric
2 tbsp celery seed
1 tbsp dry mustard
1 tsp black pepper
3 tbsp cornstarch

Directions:
Directions:
Sprinkle zucchini, onions, and peppers with salt; Let stand overnight in refrigerator. Rinse well and drain.
Combine remaining ingredients in heavy saucepan and bring to a boil. Add zucchini mixture and heat through.
Pack loosely into clean, hot pint jars, filling to 1/2 inch from top.
Adjust jar lids. Process in boiling water for 10 minutes. Remove jars from water and set upright on wire rack or folded towel to cool.
