4 large baking potatoes
8 oz. cream cheese, diced and at room temperature
1 medium onion, finely chopped
3 eggs
3 T. flour
1 tsp. salt
1/4 tsp. pepper
2 T. butter
1/2 c. chives, finely chopped
1/2 c. fried crisp bacon bits

Directions:
Directions:
Wash potatoes and bake at 400 for 40 minutes.

Half the potatoes and scoop out the insides. Put the potatoes through a dicer and place in a mixer bowl. Add cream cheese and beat smoothly with mixer on medium. Add onion, eggs, flour, salt, pepper, and re-mix until smooth. Spoon the mixture into ungreased 1 1/2 quart deep dish.

Bake at 325 for 15 minutes.

Garnish with chopped chives and bacon bits to taste.
