8 carrots, cooked and cut in lengthwise strips
14 c. of liquid from cooked carrots
2 T. grated onion
2 T. horseraddish
1/2 c. mayonnaise or salad dressing
1/2 tsp. salt
1/4 tsp. pepper
1/4 c. bread crumbs
1 T. butter
dash of paprika
parsley, minced (for garnish)

Directions:
Directions:
Place cooked carrots lengthwise in pre-buttered casserole dish (13x9 in.).

In a separate bowl, combine liquid from carrots, grated onions, horseradish, mayonnaise, salt and pepper. Mix thoroughly. Pour sauce over carrots.

Top sauce with the mixture of breadcrumbs, butter and paprika.

Bake at 375º for 15-20 minutes. Garnish with minced parsley.
