1 12-inch pizza crust
6 slices bacon, fried crisp, drained and broken into small pieces
1 tsp. olive oil
1 sweet onion, chopped
1 green pepper, chopped
1 clove garlic, minced
1 cup barbecue sauce
4 ounces pepper-jack cheese, shredded
1 chicken breast, cooked and cut into chunks
8 ounces Mexican blend cheese or shredded mozzarella cheese

Preheat oven to 450º. Place pizza crust onto a pizza pan and mist crust and rim with olive oil. Heat skillet on medium-high and cook bacon until crisp. Using the same skillet reserve 1 teaspoon bacon drippings and add 1 teaspoon olive oil. Sauté onions and peppers until tender crisp, add garlic and sauté 40 seconds or until garlic is aromatic. Remove from heat and set aside. Spread barbecue sauce over the crust. Layer remaining ingredients in the following order:

pepper-jack cheese
chicken chunks
onion
pepper mixture
Mexican or mozzarella cheese
crumbled bacon

Reduce oven temperature to 425º. Keeping pizza on the pan, bake for 10 minutes. To crisp the crust remove from the pizza pan and place directly on the oven rack for 3 additional minutes. Remove from the oven and cool for 3 minutes before slicing.
