2 cups sugar
2 cups zucchini (peeled and grated)
1 1/2 cups vegetable oil
3 eggs
1 cup crushed pineapple
1 cup shopped nuts
3 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon vanilla

Directions:
Directions:
Combine the sugar, zucchini,k oil, eggs, pineapple and nuts; mix well. Combine the remaining ingredients;
gradually add and mix into the first mixture. Bake at 325 for 1 hour. Top with cream cheese frosting, if desired.

Batter makes one 9 x 13" cake or three 8" cakes.
