1 Box White or Yellow cake mix
1/4 C Poppyseeds (You can also use 1/4 to 1/3 Cup of poppyseed filling if you prefer)
1/2 C. Vegetable Oil
1 tsp. Vanilla
1 C. Cool Water
1 Package Instant Vanilla Pudding (Eliminate this ingredient, if it is already in the cake mix)
4 Eggs

Baking spray or butter and flour for the bundt pan prep.

Beat the ingredients together for 2 minutes. Pour the mixture into a greased and floured bundt pan.

Bake for one hour at 350 degrees.

Allow the cake to cool for about 10 minutes before turning it out onto a wire rack. You may need to run a plastic knife around the edge of the pan to loosen the cake prior to its removal.

Sprinkle the finished cake with sifted powder sugar or apply a light powdered sugar glaze/icing that has been flavored with lemon, if you prefer.

This is a moist cake that takes moments to prepare, but always delivers. Adding icing or glaze dresses it up nicely for special events and guests. a touch of whipped cream on the plate is also nice. It's good for summer picnics as well as an easy holiday dessert.
