6 medium potatoes
3 eggs
1/2 cup matzo meal
1/2 tsp potato starch
1 1/2 tsp salt
pepper to taste
1 grated onion

Directions:
Directions:
Grate potatoes into cold water, then drain. Beat eggs until thick, stir in potatoes and remaining ingredients.
Bake in a greased 1 1/2 quart casserole (I use a square pyrex) at 350 for 1 hour.

I usually double the recipe and put in a 9 x 13 pyrex.
