2/3 C Butter, room temperature
1 1/2 C Sugar
2 Eggs
1 1/2 C Mashed Banana
2 3/4 C Sifted Flour
1 tsp. Baking Powder
1 tsp. Baking Soda
1/2 tsp. Salt
1/2 C. Sour Cream
1 C Chopped Walnuts (optional)
Butter and Flour or Baking Spray to coat your loaf pan

Directions:

Cream the butter and sugar in your mixer until it is light and fluffy.

Add the eggs and banana and beat it until well blended.

Sift the flour, baking powder, baking soda, and salt together. Add the flour mixture alternatively with the sour cream to the banana mixture. Stir it just to blend and to avoid making the banana bread tough. Stir in the walnuts, which are optional.

Spoon the mixture into a 9x5x3 inch loaf pan which has been greased and floured on the bottom only.

Bake at 350 degrees for an hour and 15 minutes or until a toothpick comes out clean. Let the baked loaf sit in the pan for 20 minutes. Remove it from the pan and allow it to finish cooling on a wire rack.

Note that the loaf improves if it sits overnight

This is a very reliable recipe. You can add a bit more banana, if you like. The loaf is very moist thanks to the sour cream.
