Ingredients: 3 Cups of sifted Cake Flour 1 tsp. Kosher Salt 1/2 Pound (2 Sticks) Unsalted Butter, room temperature 2 1/2 Cups Sugar 6 Extra Large Eggs 2 tsp. Pure Vanilla Extract Seeds of 1 Vanilla Bean (If you don't have a bean, you can buy them as a paste in the store) 2 tsp. grated Orange Zest (2 Oranges) 1 Cup of Heavy Cream 1/4 Cup Turbinado or Demarara Sugar (optional)

Position the oven rack in the center of the oven.
Spray a 12 Cup tube pan or bundt pan or 2 loaf pans (81/2 x 4 1/2 by 2 1/2 inches) with baking spray (Pam with flour in the spray to prevent sticking)
Sprinkle the demarara sugar on the bottom and sides of the sprayed pan to add extra crunch.
Combine the flour and salt and pass it through a sieve 3 times. Set aside.
In a mixer with a paddle attachment, beat the butter and sugar on medium speed for 5 minutes until it is light yellow and fluffy. With the mixer on medium-low, add the eggs one at a time , mixing well after each addition. Add in the extract, seeds, and zest to the mixture. With the mixer on low add the flour and cream, alternating between the flour and cream. Begin and end with the flour. Scrape down the sides of the bowl. While you're mixing it, don't worry if it looks curdled. It will smooth out as it is mixed. Increase the speed to Medium for 3 minutes. The batter will be light and fluffy.
Pour the batter into your pan(s) and smooth it over. Place the pan in a cold oven. Turn on the oven to 350 degrees and bake for 50-55 minutes. Cool the cake in the pan for 30 minutes. Remove it and allow it to cool on a wire rack. |

Notes: This pound cake is really good. The batter is beautiful and very easy to manage. The cake is a lovely gift during the holidays and can be baked in smaller loaf pans to make 4-6 individual gifts. It is rich, so giving a smaller loaf is perfect for individuals or couples. It can be served plain, with some ice cream on the side, with whipped cream, or even with fruit (Ripe fresh fruit like peaches, blueberries, strawberries or canned cherries or blueberries).
