2 cups sugar
1 cup unsalted butter (2 sticks, softened)
15 oz. ricotta cheese
2 tsp. vanilla
2 eggs
4 cups flour
2 tbls. baking powder
1 tsp. salt

Icing:

1 1/2 cups confectioners sugar
4 tbls. milk

Topping:

Multi color non-pareils sprinkles.

Directions:
Preheat over to 350º. Beat sugar and butter at low speed. Increase to high and beat until light and fluffy. Lower to medium speed and beat in ricotta, vanilla and eggs. In a separate bowl, mix baking powder, salt and flour. Reduce speed to low and add to mixture till dough forms. Drop by spoonfuls 2 inches apart onto an ungreased cookie sheet. Bake 15 minutes or until lightly golden. Cool on rack. You may ice cookies when cookies are still warm. Top with multi color non-pareils sprinkles. Wait until cookies are completely dry before serving.
