Mix together all marinade ingredients and allow an hour or more to incorporate. This can even be done the night before.

Thinly cut the meat against the grain and place into a sealable bag or container.

Allow to meat to marinate for two or more days, moving the meat around in the marinade twice a day to ensure even coverage.

Place meat in a food dehydrator for 9 to 10 hours at 150F, being careful to not have the pieces of meat overlap. Meat should be dry but not brittle.
