1 cup quinoa
2 cups water or flavored broth (chicken or vegetable)
1/4 cup olive oil
2 fresh limes, juice of
1 T balsamic vinegar
1 tsp cumin
1/2 tsp red pepper flakes
1 15-oz. can black beans, drained and rinsed
1 1/2 cup grape tomatoes, cut in half
3 green onions, finely chopped
1/4 cup fresh cilantro, chopped
1/2 cup feta cheese
Salt and pepper

1. In a saucepan, bring quinoa and water or broth to boil. Reduce to simmer, cover and cook until all liquid is absorbed, about 10-15 minutes. Let cool.

2. In a large bowl, whisk together the olive oil, lime juice, vinegar, cumin and red pepper flakes.

3. Add cooled quinoa, beans, tomatoes, onions, feta cheese and cilantro to the dressing in the large bowl. Toss and season with salt and pepper.

This recipe makes excellent quinoa bowl meals. I like to microwave my serving for 20 seconds or so to take the chill off and soften the cheese. Add a protein, serve on a bed of greens and you have a great dinner when it's hot.
