1 c. quinoa, (I use NearEast Blend Rosemary Quinoa or any of their quinoa blends)
1 bunch kale, thinly sliced and massaged
12 oz. shredded brussel sprouts
1/2 c. toasted almonds
1 c. cotija cheese, crumbled
cooked chicken breast, I usually use thin chicken breasts seasoned with adobe seasonings.

1/4 c. lemon juice
2 tbsp. dijon
1 tbsp. minced shallot
1 clove of garlic, grated
1/2 c. olive oil

Directions:
Directions:
In small bowl, whisk together the lemon juice, dijon, shallot, & garlic. While whisking, slowly drizzle 1/2 c. olive oil. Season dressing with s/p

In large bowl, toss the cooked quinoa, kale, brussels sprouts, and almonds together. Add dressing and cheese. Season w/ salt & pepper.

Top with sliced chicken breast.
