4-5 Clementine (about 1 pound total weight)
6 eggs
1 cup plus 2 Tbsps of sugar
2 1/3 cups ground almonds
1 heaping tsp baking powder

Directions:
Directions:
1. Put clementines in a pot with cold water to cover. Bring to a boil. Cook for 2 hours. Drain and when cool, cut each clementine in half and remove seeds. Then... finely chop the skins, pith, and fruit in the processor (or by hand,)
2. Preheat oven to 374 degrees F.
3. Butter and line an 8 inch springfoam pan with parchment paper.
4. Beat the eggs. Add the sugar, almonds, and baking powder. Mix well, adding the chopped clementines.
5. Pour the cake mixture into the prepared pan and bake for 1 hour or when a skewer will come out clean. You may have to cover the cake with foil at 40 minutes to stop the top from burning.
6. Remove from oven and leave to cool, in pan on a rack. When the cake is cold, you can take it out of the pan.

I enjoyed making this cake. It is a "gluten free". It tastes delicious You can make a buttercream icing or a glaze made with icing sugar, orange juice and water.
