3 lemons
1/4 pound butter
lemon rind
2 cups sugar
3 eggs

Directions:

Melt butter and sugar
Add lemon juice and rind
Add beaten eggs

Boil until thick in double boiler

This is a recipe of my mother's
She used to cut the center out of vanilla cupcakes
and fill it with this curd
