3 cups shredded unsweetened coconut flakes
4 Tbsps coconut milk
4 Tbsps coconut oil
1/2 cup raw honey
1 - 1 1/2 tsp peppermint extract (to taste)
1 1/2 cup of dark chocolate

Directions:
Directions:
In a blender or food processor, pulse the shredded coconut, coconut milk, coconut oil, honey, and peppermint extract. Process until a smooth paste has formed.

Place a bite size dollop onto parchment paper on a baking sheet. Shape the paste into round discs and coat/drizzle with a light coat of melted chocolate. Set in the freezer for about 20 minutes.

Enjoy! Store leftovers tightly wrapped in the freezer!
