1 dozen eggs
1 pkg. bacon, cut in slices
1/2 onion, chopped
1 small red potato, cut in small dice
salt, pepper and 21 Seasoning Salute (spice mix from Trader Joes)

Directions:
Directions:
In a small bowl, whisk eggs and season with salt, pepper and 21 Seasoning Salute spice mix from Trader Joes. (Use whatever spices you like). Set aside.

Heat a large pan on med-low heat. Take the bacon slices and pull them apart and put the back together just like they were. This will make it easier to separate them when cooking them. I use kitchen shears to cut slices into the pan - or you can slice it and add it to the pan. Cook the bacon slices until done - but not overly crispy. Remove them to a paper towel lined bowl to drain. Remove some of the bacon grease, but leave some to cook the onions and potatoes in.

Add chopped onions & potates in the bacon grease & season with salt & pepper. Cook just until soft. Add the egg mixture and cook. When the eggs are almost done to your liking, add the bacon back in.

I love these scrambled eggs. You can also add a little bit of garlic powder or onion powder in the scrambled eggs. Yummo!!!!!!!!
