2 c. fine zwieback crumbs
1 1/2 c. sugar
1 tsp. cinnamon
1/2 C melted butter or other shortening
4 eggs
1/8 tsp. salt
1 1/2 tsp. lemon juice
1 1/2 tsp. grated lemon rind
1 c. gram
1 1/2 lb. cottage cheese
3 tbs. flour
1 1/4 c. chopped nut

Directions:
Directions:
Mix zwieback with 1/2 c. sugar, cinnamon and butter. Set aside 3/4 c. crumb mixture to sprinkle over the top, and press remainder of crumbs into a 9" spring form pan, lining bottom and sides. Beat eggs with remaining 1 c. sugar until light. Add salt , lemon juice and rind, cream, flour and cheese. Beat thoroughly and then strain through a fine sieve. Pour into lined pan, sprinkle top with remaining crumbs and nut. Bake in moderate oven 350 F for about 1 hour or until center is firm. turn off heat and let stand in oven 1 hour with door open or until thoroughly cooled. Serves 10 to 12. vanilla tsp. and be used instead of lemon juice and rind
