Chicken:
3 - 4 large chicken breast, seasoned
2 cans cream of chicken soup
½ tsp. oregano leaves
¼ tsp. each: cumin, sage, chili powder, garlic powder

Casserole Ingredients:
Vegetable oil
1 pkg. (12 count) corn tortillas
1 can (4 oz.) green chilies, diced
1 lb. cheddar cheese, shredded
½ lb. Monterey jack cheese, shredded
1 large onion, diced
1 can corn, drained
1 can sliced olives, drained
Fresh cilantro, chopped

Chicken:
1. Sprinkle chicken with seasoned salt and pepper and wrap in foil.
2. Set in baking pan and bake at 350º until chicken is cooked, 30 - 40 minutes.
3. Cool, reserve liquid, and dice chicken. Mix liquid with soup and seasonings.
Casserole:
1. Dip each tortilla in the hot oil until softened, then drain on paper towel.
2. Grease bottom of casserole dish. Overlap 3 tortillas evenly in bottom of dish.
3. Add ¼ each of: chicken, chilies, cheeses, onion, corn and soup mixture. Repeat until everything is used.
4. Top with olives and cilantro. Bake covered 375º for 30 mins then 10-15 mins uncovered.
