Gnocchi:
5 medium potatoes, boiled, peeled
1 c. flour
1 - 2 eggs
Pinch of salt
Parmesan - for serving

Sauce:
Onion
Garlic
Olive oil
1 can crushed tomatoes
Fresh basil
Salt

Directions:
Gnocchi:
1. Boil potatoes (whole). Peel and mash well.
2. Add one egg and 1 c. flour. You may need more flour. Just see what the texture is like. (If you are making a big recipe, add 1 more egg. More than 5 average potatoes needs 2 eggs. Add a little salt.
3. Roll them into snakes and cut into little balls. Roll a fork over them to curl them.
4. Put them in boiling water, when they rise to the top take them out. Place on paper towel to let water drain or leave in colander for a few minutes. Then place in serving dish with fresh Parmesan cheese and sauce.

Sauce:
1. Chop onion and garlic and place in saucepan. Fry with olive oil for a few minutes.
2. Add one can of crushed tomatoes. Add fresh basil and salt to taste. (I like lots of basil.)
