Ingredients: Step 1 Fruit- you can buy canned pie filling if you want, I use my Huckleberry pie recipe, you can use it for blueberries also.
3 c huckleberries 1 c white sugar ¾ c water 1 tsp lemon juice 3 tbsp heaping cornstarch
Step 2 2 c flour 1/2 c brown sugar 1 c margarine (soft) 1/2 c chopped nuts
Step 3 2 envelopes dream whip 1 c icing sugar 8 oz of cream cheese 1 tsp vanilla

Directions:Step 1 - Combine 1½ cups berries with water, cornstarch, sugar and lemon juice in a sauce pan. Cook until thick, stirring constantly. Remove from heat and stir in remaining huckleberries. Let cool.
Step 2 - Mix. Pat firmly into 10 X 13 cake pan. Bake 350* for 15 minutes, or until lightly browned. Remove from the oven and crumble it up, divide into half. Press half back in the bottom of the pan. (I usually press like ¾ back in bottom of the pan and save ¼ for sprinkling on top)
Step 3- Mix dream whip following directions on the package, then add icing sugar, cream cheese, vanilla and mix well. Pour over crumbs and then sprinkle the other ½ (or ¼) mixture of crumbs on top of the cream cheese filling. Pour the fruit mixture on top. Set in fridge to set up. Cut into square and eat.
Variations: I have used a couple tablespoons of jello to make a fruit filling for strawberries, raspberries, etc. Follow the same recipe as huckleberries but put in the jello flavor you desire and then add the fruit. |
