Ingredients: 2 cups water for 16 buns, 4 cups for 32 buns, etc. 1 T baking yeast per 2 cups water (I use quick acting) 1/4 cup butter, 1/4 cup vegetable oil 1 T salt per 2 cups water 2 cups whole wheat flour Maybe a cup of oatmeal if you like. White flour for the rest (maybe 3-4 cups)

Directions:1. Mix yeast in lukewarm water (never hot). 2. Add butter, oil, salt, whole wheat flour, oatmeal (if using) and mix well. 3. Add enough white flour - a bit at a time - just until it comes away from the sides of the bowl. *Do not add too much or buns will be dry and hard. 4. Turn onto lightly floured board and knead, adding flour as necessary to keep from sticking. *Knead until dough is stiff and elastic. *Remember not to add too much flour. 5. Cover to let rise in warm place until double or as long as you have time for. 6. Punch down, shape into buns, place on buttered baking sheet to rise again. 7. When almost double, bake in pre-heated oven 350-375º for about 20 minutes until golden. |

Notes: So many variables to this recipe. If the house is cool, you can let it rise in a slightly heated, then turned off, oven. Knead it well but be sure to add just the right amount of flours, not too much but enough so it doesn't stick. Start with less flour and add only as needed. This recipe takes a bit of practise but soon it becomes easy. And you can make different shapes of buns...snowmen, cars, bunnies etc. For extra nutrition you can add 1/4 cup of wheat germ.
