2 tsp lemon zest
1/4 cup lemon juice
2 tbsp. olive oil
4 large garlic cloves
2-3 tsp dried oregano leaves
3/4 tsp salt
1/8 tsp black pepper
2 med baking potatoes
1 med red bell pepper cut into 1 in pieces
1 med red onion cut into wedges
8 oz fresh whole mushrooms
4 split (bone in) chicken breast halves

Pre heat oven 400F
In 1 Quart bowl, zest lemon
Combine lemon zest, juice, and oil. Add garlic, oregano, salt, and pepper

Cut each potatoe lengthwise into 8 wedges., Place in 9x13 baker.

Add bell pepper, onion, mushroom, lemon juice mixture. Toss to coat.

Bake 1 hour or until chicken is no longer pink in center, brushing chicken and vegetables with an juices after 30 min.
