Ingredients: 2 C. 1 Tsp. baking powder 1 Tsp. Baking soda 1 Tsp. cinnamon 1/2 Tsp. of nutmeg dash of salt 1/4 C. Cocoa 3 Eggs, 2 C. Sugar 1/2 C. Oil 3/4 C. Butter milk 2 C. of Shredded zucchini 1 C. chopped walnuts 1 tsp. Vanilla dash of almond flavoring

Directions:Mix flour and baking powder, soda cinnamon nutmeg and salt. Stir in cocoa and set a side. Beat eggs gradually adding sugar until the eggs are frothy. Add oil gradually add the dry mixture alternately with three quarters cup of buttermilk and two cups of shredded zucchini do not peel first. Add nuts and vinalla with a dash of almond flavoring. turn mixture into a well greased and floured rectangular cake pan, or two greased and floured nin inch layer pan. Bake in an oven preheated to 350º for about 40 min for the layers or until they test done or about 55 min fo the pan cake or until test done. Cook then fill and frost or simply frost if you've made a pan cake with either a cream cheese frosting or a chocolate butter frosting |
