10 oz. Zwieback
5 tbsp. butter
1 3/4 tsp. sugar
1/4 tsp. cinnamon.
2 lbs. cottage Cheese
8 egg yolks
1/2 cup plus
2 1/2 tbsp. sugar
1 tbsp. salt
1 1/2 tbs. vanilla
1 c. heavy cream.

Crush 10 oz zwieback with a rolling pin and press the crumbs through a sieve. Mix crumbs with 5 tbsp melted butter, 1 3/4 tsp sugar = 1/4 tsp cinnamon. Pat the mixture thickly on bottom and lightly on the sides of a well buttered 10" spring foam pan reserving a few crumbs for top. Press 2 lbs cream cheese thought a fine sieve. Beat in 8 egg yolks 1/2 cup pluss 2 1/2 tbsp vanilla = continue beating for 15 min. Blend in 1/2 C. heavy cream. Beat 8 egg whites sift with 1/2 C. plus 2 1/2 tbsp sugar. Fold the egg whites into the cheese mixture and carefully stir in 1/3 cup melted butter. Pour the filling into the crumb lined pan and sprinkle the top with the remaining crumbs. Bake the cheese cake in hot oven (400F) for 40 to 50 min
