3 lbs of red potatoes
1 lb fresh green beans trimmed
1 red onion sliced into thin strips
3-4 large tomatoes

Dressing (you may have to double):
¼ cup of Olive oil
¼ cup red wine vinegar
1 tsp of salt
1/2 tsp of garlic powder
1/4 tsp of black pepper
1/4 tsp or pinch more of Italian seasoning
2 Tbsp of lemon juice
Make dressing and set aside.

Directions:
Directions:
1. Place washed potatoes with skins on in salted water, boil until fork tender, but not breaking apart.
2. Meanwhile steam or boil green beans (not too long) to your liking.
3. Drain beans and place in bowl with 1 tsp of olive oil. Cut in strips before adding to potatoes.
4. When potatoes are done lift out with slotted spoon when still warm peel and cut in quarters.
5. Place potatoes, green beans and onions in large bowl and mix together with ½ of dressing.
7. Refrigerate overnight.
8. Serve room temperature, add tomatoes that are cut in quarters before serving.
