9 oz. can crushed pineapple
1/3 C. shortening
1/2 C. sugar
1 tsp. Vanilla
1 egg
1 1/4 C. Flour
1 1/2 tsp. baking powder
1/4 tsp. salt
1/2 C. flaked coconut
1/3 C. brown sugar
3 tbsp. melted butter

Directions:
Directions:
Drain pineapple and save juice. Cream together shortening and sugar. Add vanilla and egg beat well. Sift all the dry ingredients together. Add alternating with 1/2 C Pineapple juice with dry to creamed mix. Pour 1/2 batter into 9" greased cake pan. Spoon pineapple over batter. Pour remaining batter in pan. Cover with brown sugar and coconut. Drizzle melted butter. 350º 40 min
