Pineapple Upside Down Cake Recipe

1 1/2 cups pineapple slices (drained)
1/2 cup brown sugar
1/3 cup shortening
1/8 teaspoon salt
1/2 cup sugar
1 egg (beaten)
1 teaspoon vanilla
1 1/4 cups flour
1 1/2 teaspoon baking powder
1/2 cup canned pineapple juice

Sprinkle brown sugar in bottom of buttered pan. Place pineapple slices on top of brown sugar.
Decorate with maraschino cherries and/or pecans, if desired. Mix remaining ingredients for cake batter.
Spread batter over pineapple. Bake at 350 for 40 minutes Let stand for 5 minutes; then turn out onto plate.
Serve with whipping or plain cream.
