1 1/2 c salsa
2 15 oz can black beans, rinsed and drained
1 8.5 oz package corn muffin mix
1 fresh jalapeno, seeded and finely chopped
2 1/2 tsp chili powder
2 Tbs olive oil
1/2 c sour cream
1/2 tsp chili powder

Directions:
Directions:
Drain 1/2 c of the salsa in a colander. In a large bowl, mash drained beans with a potato masher or a fork. Stire in the drained salsa, muffin mix, half of the jalapeno, and the 2 1/2 tsp chili powder.
In an extra-large skillet, heat 1 Tbsp oil over medium-high heat. Drop four 1/2 c mounds of the bean mixture into hot oil. Using a spatula, flatten mounds into 3 1/2 in cakes. Cook about 6 min. or until brown, turning once. Remove from skillet. Repeat with remaining oil and bean mixture.
In a small bowl, combine sour cream and the 1/2 tsp chili powder. Top bean cakes with the remaining salsa, the remaining chili, and the seasoned sour cream.
