2 Cups Sugar
4 Cups Flour
2 Teaspoons Soda dissolved in water
½ Teaspoon Salt
1 Teaspoon Baking Powder
1 Teaspoons Vanilla
1 Cup Canola Oil
4 Eggs
2 Cups Mashed Bananas
1 Cup Buttermilk
Add coconut if desired, makes 3 medium loafs. Bake 350 for 1 hour

Wet Ingredients: Mix oil and sugar together then add eggs, mashed bananas, baking soda and water, vanilla and buttermilk

Combine dry ingredients and wet ingredients - hand mix only until flour is incorporated - do not over mix

Bake at 350 in load pans sprayed with Pam for about 1 hour or until toothpick comes out clean from the middle
