Ingredients: 1 lb. ground beef 1/2 c. chopped onion 1/3 c. chopped green pepper 1- 6 oz. can tomato paste 1-4 oz. can mushroom pieced, drained 3/4 c. chopped pepperoni, if desired 1 tsp. salt 1/8 tsp. garlic powder 1/2 tsp. dried oregano leaves, crushed 1/2 tsp. dried basil leaves, crushed 1/8 tsp. pepper 2 c. water 2 c. uncooked noodles 1 c. shredded mozzarella cheese 1/4 c. parmesan cheese

Directions:Crumble the ground beef into the plastic colander and add the chopped onion. Rest the colander in the microwave safe bowl. Cook on full power for 3 minutes. break up the meat with a fork. Microwave for another 1 1/2-3 minutes on full power. stir again with a fork. If some meat is still uncooked, cook at 1 min intervals until done. Pour off grease.
Put the drained meat and onions in ad 2 to 4 qt. microwave safe casserole dish. Add the green pepper, tomato paste, drained mushrooms, pepperoni, salt, garlic powder, oregano, basil, pepper, water and uncooked noodles. Stir.
Cover the casserole with a lid or vented plastic wrap. Microwave on full power for 5 minutes. Stir well with a wooden spoon. Microwave another 5 minutes on full power. Stir again. If the noodles are not tender, recover the dish and cook for an additional 2-3 minutes at full power. Stir well.
Sprinkle mozzarella cheese and parmesan cheese on top of noodle mixture. Microwave at full power for 1 1/2 minutes until cheese is melted. |
