Beefy Vegetable Soup Recipe

Patti James- North Scott Lenten Soup


2 c. diced celery
3 c. diced carrots
1 1/4 c. diced onion
Cook the above in about 2 c. water with 2 beef bouillon cubes.

4 c. diced potatoes
Add potatoes to celery, carrots and onion. Cook until tender.

2 c. frozen peas
2 c. frozen corn
Add peas and corn to the soup mixture.

1 1/2 lb. lean hamburger, browned and added to the soup mixture.

1 1/2 qts. tomato juice
2 beef bouillon cubes
2 c. water
Add tomato juice, bouillon and water to soup mixture.

Make the soup one day ahead of serving to allow for flavors to blend better.

Makes about 5 qts. soup.
