1 1/2 lbs Fish, filleted
1 lime
1 small yellow onion
3 cloves garlic
15 (approx) stems cilantro, leaves and stems
1 tbsp extra virgin olive oil
1/2 tsp sea salt
1/4 tsp freshly cracked black pepper
1 tsp dried thyme or 1 sprig fresh
1/2 tsp red pepper flakes/seeds (optional)
Olive oil cooking spray
4 Roma tomatoes or 2 early girl tomatoes

Directions:
Directions:
Zest and juice lime and put aside
Place onion, garlic, lime juice, oil, thyme and cilantro in chopper and mince together
In a bowl with fish add the minced mixture, zest, salt, black pepper and pepper flakes.
Make sure all the fish is covered with seasonings
Let marinate for 1/2 hour in fridge
Spray baking dish with cooking spray, place fish, layer of tomato and cover with foil
Bake in oven at 375 F for 30 minutes
