2 salmon filets, 6 oz. each
2 tablespoons toasted sesame oil
1/2 teaspoon salt
1-1/2 tablespoons cooking oil
1 tablespoon sesame seeds

Directions:
Directions:
Use a paper towel to pat dry the salmon filets, then brush them with 1 tablespoon of the sesame oil and sprinkle with 1/4 teaspoon of salt. Heat the cooking oil in a large skillet set over medium-high heat. When the oil starts to shimmer, gently add the salmon filets flesh side down. Cook for approximately 3 minutes, then flip onto the skin side. Cook for an additional 3-4 minutes or until the salmon is barely cooked through. Be careful not to overcook it. Remove the salmon from the heat, brush with the 1 tablespoon reserved sesame oil and sprinkle with the sesame seeds and remaining 1/4 teaspoon of salt.

Personal Notes:
For over 30 years I coached girl's/women's basketball. Gigi and my girls were excellent players and when they asked me to coach them in an adult league I was flattered. The roster was Gigi, my three daughters, my two sisters and a few other girls I had coached many years before. Now, it is a scientific fact that there is a genetic predisposition of grown women to ignore instructions from any related male. This is settled science. Talk about trying to call a play or get their attention during a time out. Although it was fun, it was humbling and proved what George W. Bush famously said, "As a man ages he moves further and further down the pecking order as more and more children and grandchildren are born into the family." I'm fine with that.
