2 c sugar
1 c vegetable oil
4 large eggs

2 c flour
2 tsp baking soda
2 tsp cinnamon
½ tsp ginger
1 tsp baking powder
½ tsp salt

2 c pumpkin purée (canned)
½ c chopped pecans (optional)

Directions:
Directions:
Combine the first three ingredients, then add dry ingredients and mix. Finally, add pumpkin and nuts (if desired--I don't use them). Bake in two 9-inch greased and floured cake pans at 350 degrees for 35-40 minutes--when toothpick inserted into center of cake comes out clean.
 

Cream Cheese Frosting

8 oz cream cheese
1 lb confectioner's sugar
2 tsp vanilla

Mix all ingredients together and spread on cooled cake.
