"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

1. In a medium bowl, cream together the sugar and shortening. Stir in the egg and vanilla, beat until light and fluffy. Combine the cake flour and baking soda and stir into the creamed mixture. Dough will be stiff. You may need to use your hands to mix. Roll dough into a log about 15 inches long and roll it into the ground nuts. Wrap and chill the dough for at least 1 hour, or until firm.

3. Unwrap the dough and cut it into ½ inch slices. Place cookies 1 ½ inches apart on the prepared cookie sheet.
4. Bake for 10 - 15 minutes in the preheated oven. Allow cookies too cool for a few minutes before removing to cool on wire racks. When cool, place a dollop of fudge icing onto the center of each cookie.
