2 - 15 ounce cans black beans, drained and rinsed
1- 16 ounce can shoepeg corn, drained
6 tbsp. fresh lime juice
6 tbsp. olive oil
1 1/2 tsp grounded cumin
1/2 cup red onion finely chopped
1/4 cup chopped fresh cilantro
1/2 tsp salt
1 cup chopped tomato

Directions:
Directions:
Combine all ingredients except tomatoes. Cover and refrigerate overnight.

Add tomatoes just before serving along with an extra squeeze of lime.
