1 ½ cups flour
1 ½ cups whole milk at room temperature
4 eggs warmed up in warm water
2 Tsp. salt
3 Tsp. melted butter

Optional:
1 small log of goat cheese: crumble into large pieces and add to the mixed batter before pouring into your baking pan
Fresh rosemary: add some to the batter before mixing and garnish with a small sprig before baking
Jam or Lemon Curd: fill tin halfway, add jam or lemon curd, cover with remaining batter until 3/4 full and bake
Parmesan: top with shredded Parmesan before baking

Combine first five ingredients for basic popovers in a bowl or stand mixer and mix well. Pour batter into buttered popover pan or muffin tin, filling each mold 3/4 full. Popovers will literally pop over the top of the pan while baking.

Bake at 425º for about 30 minutes, or until browning on top.

I acquired a popover pan at Philly AIDS Thrift because it looked cool and it became my go-to recipe to make when there’s no food in the house. I fill, top or serve them with whatever I have. They are a great breakfast side with eggs and bacon or sausage.
