3 c. grated zucchini
3 c. sugar
3 c. flour
1 1/2 c. oil
2 tsp. baking powder
4 eggs
1 tsp. baking soda
1 1/2 tsp. cinnamon
1/2 tsp. salt

Directions:
Directions:
Mix zucchini, sugar, oil and eggs. Combine dry ingredients and mix with oil-sugar mixture. Mix well. Grease an oversized jelly roll pan and then pour batter into it. Bake at 300 degrees for 1 hour. Cool and frost with cream cheese frosting.

Note: Use the largest jelly roll pan as mixture tends to flow over the sides when cooking.
