2 c. tomato juice
2 T sugar
2 t salt
3 T minute tapioca
16-20 ounces beef stew meat
1 large onion, diced
4 carrots, peeled and sliced in large pieces
1 rib celery, sliced
4 potatoes, peeled and cut in large pieces

Directions:
Directions:
Heat oven to 250 degrees Fahrenheit.
Stir together tomato juice, sugar, tapioca and salt.
Mix stew meat, carrots, onion, celery and potatoes in 3-4-quart casserole. Pour tomato juice mixture over stew ingredients and mix with two large spoons so meat and vegetables are coated with thickened tomato sauce.
Cover the baking dish tightly or with foil and do not open. Bake stew for 4 hours until all ingredients are fork tender. If doubling recipe bake for 5 hours.
