1 1/2 c. all purpose flour
3 tbsp. cocoa
1 c. granulated sugar
1 tsp. baking soda
1/2 tsp. salt
1 tsp. white vinegar
1 tsp. vanilla extract
5 tbsp. canola oil
1 c. water

Preheat oven to 350ºF. Line cupcake tin with liners and spray with non-stick spray. In large bowl mix together flour, cocoa, sugar, baking soda, and salt. Make 3 wells, 2 small and 1 large. In the 2 small wells, add vinegar and vanilla extract. In large well, add canola oil. Pour water over all ingredients. Mix well. Fill each liner 3/4 full. Bake for 15-20 minutes until toothpick comes out clean.
 

Buttercream Frosting

Ingredients:

1/2 c. softened butter
4 c. powdered sugar
2 tsp. vanilla extract
3-5 tbsp. milk (or almond milk)

Add softened butter to stand mixer with whisk attachment. Beat on medium speed for 3 minutes. Just before the end of the 3 minutes, add 3 tbsp. of milk to begin and extract. Reduce to low speed and slowly incorporate the powdered sugar. Beat for an additional 3 minutes. If food coloring is desired, add during this time. Add more milk if needed.
 

Cream Cheese Frosting

1/2 c. salted butter
8 oz. cream cheese
2 tsp. vanilla extract
2 to 4 c. powdered sugar

In stand mixer, beat butter and cream cheese until light and fluffy. Mix in vanilla extract. Slowly add powdered sugar. Beat on high until smooth
