¼ cup - coconut oil, melted
¼ cup - heavy whipping cream
1 tbsp. - sugar
¼ tsp. - salt
3 - eggs
½ tsp. - vanilla extract
¼ cup - coconut flour
½ tsp. - baking powder

Directions:
Directions:
In a large bowl, beat the eggs and mix together with the cream, oil, sugar, salt, vanilla, and baking powder. Gently mix in the coconut flour till combine, careful to not over mix and make the mixture too thick. (If the mixture becomes too thick add an additional egg.)

Pour ¼ cup increments of mixture into a hot pan. Cook each pancake 1-2 minutes per side, flipping when bubbles start to show.

Makes approximately 6 4" pancakes.
