3 c. flour
3 tsp baking powder
1/2 c. butter
2 c. sugar
4 eggs stiffly beaten
1 tsp. vanilla
1 1/2 c. cold water

Directions:

Beat egg whites until stiff. Set aside.

Cream butter and sugar. Add flour and baking powder - alternating with water.

Add vanilla.

Fold in egg whites.

Can be used as a layer cake or in a sheet pan.

Bake 350º for 30 minutes,

This is just the best cake! I don't have any idea why it is called "Coconut Cake"! I use this icing if I'm going to be using decorator tools, otherwise I use a white red velvet cake icing and sometimes put coconut on it.

I've used this recipe for years when I need the cake to turn out of a pan for decorating or layer cakes. This is the recipe I use to make the Easter Bunny cake as well. My good friend calls it "Connie Cake" and bakes it in a sheet pan to use for strawberry shortcake.

I've seen this particular recipe also called "German White Cake".
