3 Cups Sugar
½ Cup Hot Water
1 Cup Evaporated Milk
¼ Tsp. Salt
4 Tbsp. Butter
2 Tsp. Grated Orange Rind
1 Cup Chopped Nuts

Directions:
Directions:
Put 1 cup sugar into heavy pan. Cook and stir over medium heat until sugar melts and is golden in color (carmelized). Add the very hot water stirring till sugar dissolves. Stir in remaining 2 cups of sugar, milk and salt. Cook over low heat stirring often until the temperature is 240º on candy thermometer. Remove from heat, add butter, orange rind and chopped nuts. Beat until thick and creamy. Turn out onto a foil lined (grease foil) pan. Cool and cut into squares.
