Cornbread
1 ½ Cups Cornmeal
½ Cup Flour
1 Tsp. Salt
2 Tsp. Baking Powder
½ Tsp. Baking Soda
1 ½ Cups Buttermilk
2 Tbsp. Shortening
1 Egg

5-6 Slices Day Old Bread
2 Eggs
1 Onion
4-6 Stalks Celery
1 Stick Melted Butter
Salt
Pepper
Poultry Seasoning

Directions:
Directions:
Mix cornbread ingredients together. Grease 9x13 pan with shortening and add cornbread mix. Bake are 375º for 20-25 minutes. Remove from oven and allow to cool.

Crumble cornbread, tear day old bread into small pieces and toss together with cornbread. Add chopped onion and celery, eggs and melted butter and mix together. Season to taste. More butter or chicken stock can be added if mixture seems dry but don't over add you still want the stuffing to have a looseness to it. Pads of butter can be added to the top while cooking. Bake at 350º for 30-40 minutes.
